SOUR CREAM BEETS 
1 qt. chopped beets (about 15 small beets)
2 tbsp. butter
2 tbsp. sugar
2 tsp. salt
1/4 tsp. pepper
1/2 c. water
1 tbsp. flour
1 c. sour cream

Melt butter in saucepan; stir in peeled, chopped beets, sugar, salt, pepper and water. Bring to boil and cook gently until beets are tender, about 12 minutes.

Blend flour into sour cream and fold into beet mixture. Serve immediately.
