DIJON CHICKEN | |
1 boneless breast of chicken Dijon mustard Bread crumbs Salt and pepper 1/4 c. butter Remove skin from chicken. Pound chicken flat. Lightly salt and pepper, then spread thinly with mustard (the more, the spicier). Cover with bread crumbs, then turn over and repeat steps with other side. Place on flat baking tray (pizza tray is good) that has been sprayed with non- stick coating. Melt butter and drizzle over chicken. Bake at 425 degrees for 12 minutes. |
