SCRAMBLE EGG CASSEROLE 
1/4 c. green pepper, diced
1/4 c. chopped onion
2 c. mushrooms, fresh or canned
8 oz. grated Swiss cheese, approximately 2 c.
8 oz. grated cheddar cheese

Reserve 1/4 cup of above cheese for top. 2 eggs, slightly beaten 2 c. milk 1 1/2 c. flour 1 tsp. salt

Mix egg mixture with cheese and place in 9 x 13 glass baking dish. Sprinkle remaining cheese and bake at 400 degrees for 30 minutes.

Freezes very well after it is baked.
