SOUR CREAM-ORANGE PECAN POUND
CAKE
 
1 c. shortening
3 c. sugar
6 eggs
3 c. flour
1/4 tsp. baking soda
1/2 tsp. salt
8 oz. sour cream
1 tbsp. plus 1 tsp. orange extract
1 c. chopped pecans

In a large mixing bowl cream shortening and sugar together. Add eggs one at a time. Beat well after each egg.

In a small bowl combine flour, soda and salt. Alternate adding flour mix and sour cream (begin and end with flour). Stir in orange extract and pecans.

Pour into a greased and floured 10 inch tube pan. Bake at 325 degrees for 1 hour and 30 minutes or until toothpick inserted comes out clean. Cool 10-15 minutes then remove from pan and cool completely on rack.
