GREAT BAY FISH CHOWDER 
1 med. onion
1 lg. carrot, sliced thin
1/2 c. finely diced celery
1 clove garlic, crushed (optional)
2 tbsp. butter
6 1/2 oz. can minced clams
3 c. chicken broth
8 1/2 oz. can stewed tomatoes
1 bay leaf
1/2 tsp. leaf thyme
Dash of cayenne
1 lb. ocean perch or other fish fillets, unthawed and salted to taste
