ELEPHANT EARS 
2 pkgs. yeast
1/2 c. warm water
2 tsp. salt
1/2 c. sugar
2 tbsp. butter, melted
1 c. water
1 egg, beaten
4 2/3 c. flour

Dissolve yeast in 1/2 cup warm water; set aside. In medium mixing bowl, combine salt, sugar, and 2 cups of the flour. Stir in dissolved yeast the 1 cup of water, beaten egg, and melted butter; beat in enough remaining flour to make a soft dough; pinch off piece of dough size of an egg and roll out to 1/4 inch thick on floured surface. Drop in deep hot fat for 2 minutes or until golden brown and puffy, slightly crisp. Remove from fat; let drain. Shake in small sack of cinnamon and sugar.

Cinnamon Mixture: 1/2 cup sugar and 2 teaspoons cinnamon
