VIDALIA ONION AND BROCCOLI
CORNBREAD
 
1 lg. Vidalia onion, chopped fine
1 pkg. chopped broccoli, (10 oz.)
6 oz. cottage cheese
4 eggs, well beaten
1 pkg. Jiffy cornbread mix
1 tsp. salt
1 stick butter, or less

Mix all ingredients well. If you use frozen broccoli, (thaw and drain well). Bake in greased pan (9 x 9 inch) in 425 degree oven until brown. About 30 to 40 minutes.
