COLD NIGHT CASSEROLE 
1 c. brown rice
3 1/4 c. boiling water
1 lb. ground beef
2 c. shredded carrots
1/2 c. chopped onion
2 tbsp. butter
2 tbsp. brown sugar
1/3 c. soy sauce
1 (4 oz.) can sliced mushrooms with liquid
1 (8 oz.) can sliced water chestnuts
1/2 c. chopped cashews

Preheat oven to 350 degrees. Combine brown rice and boiling water in 2 quart casserole. Brown beef, carrots and onion in butter. Mix in sugar, soy sauce, mushrooms and water chestnuts. Stir into casserole with rice. Cover and bake 1 hour and 15 minutes. Remove cover. Sprinkle cashews on top and bake 15 minutes more. Serves 4.
