COFFEE CAKE MUFFINS 
1 1/2 c. sifted all-purpose flour
1/2 c. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1 well-beaten egg
1/2 c. milk
1/4 c. brown sugar
1/4 c. chopped walnuts or pecans
1 tbsp. all-purpose flour
1 tsp. ground cinnamon
1 tbsp. butter, melted

Sift 1 1/2 cups flour, granulated sugar, baking powder and salt into mixing bowl; cut in shortening until mixture resembles coarse crumbs. Mix egg and milk; add all at once to flour mixture; stir just until moistened.

Combine brown sugar, nuts, 1 tablespoon flour, cinnamon and melted butter. Place half of batter in greased muffin pans. Sprinkle nut mixture over, then top with remaining batter, filling pans 1/2 full. Bake at 350 degrees for about 20 minutes. Makes 12.
