HEARTY BEEF VEGETABLE SOUP | |
1/2 lb. lean beef 2 c. water 1 1/2 tbsp. wine vinegar 2 c. chicken stock 1/2 stalk celery, minced 1 sm. onion, minced 1 sm. green pepper, seeded & cubed 1/4 c. yellow turnip, peeled & diced 1 tbsp. fresh parsley 1 bay leaf 1/2 c. spaghetti noodles, broken 1 c. canned salt free tomatoes 2 tsp. salt free tomato paste 1/2 tsp. dried thyme Place meat and water in large pot. Bring to boil and cook, uncovered for 5 minutes. Add stock, vegetables, garlic, parsley and bay leaf. Bring to simmering, cover and simmer 1 hour. Add remaining ingredients, cover and simmer for 30 more minutes. Stir and let stand uncovered for 10 minutes before serving. Makes 6 servings. Each serving equals approximately 125 calories. |
