HARVARD BEETS 
1 can beets, diced
1 tbsp. cornstarch
1/4 c. vinegar
2 tbsp. sugar
1/4 tsp. salt
2 tbsp. butter

Drain beets, reserving 1/3 cup liquid. In a saucepan, combine sugar and cornstarch. Add salt, reserved liquid, vinegar, and butter. Cook and stir until mixture thickens and bubbles. Add beets and heat through.
