GOURMET BRISKET 
5 lb. beef brisket
2 onions, sliced
4 celery stalks, sliced
1/4 c. water
1 c. chili sauce
1 can beer

Place onions and celery in open roaster on top of beef. Pour chili sauce over roast. Add water. Roast at 325 degrees, baste often until brown. Cover and cook until tender. Total time about 2 1/2 hours. Pour beer over brisket, recover and cook 1 more hour. Remove fat from gravy. Slice meat, use sauce to cover. Serves 8-10.
