TWICE BAKED POTATOES 
6-8 baking potatoes
1/2 c. butter
16 oz. container lite sour cream
2 tbsp. chopped chives
1/2 lb. cooked bacon, crumbled
1 lb. sharp Cheddar cheese, grated

Clean and bake potatoes (microwave about 6 minutes per potato). In a 13x9 inch pan chop and mash potatoes mixing with butter, sour cream, chives, bacon and grated cheese reserving 1/2 of cheese for top. Can be prepared a day ahead, super for company - no fuss! Just as good left over (reheat or microwave about 1 minute) !

Bake 350 degrees, 30 minutes until cheese on top slightly browns.

Since microwave ovens vary in power, you may need to adjust your cooking time.
