QUICK PUDDING CAKE 
1 c. flour
3/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 c. milk
1/2 c. coconut or raisins

SAUCE:

1/2 c. brown sugar
1 c. boiling water
1 tbsp. oil

Sift dry ingredients, add milk and coconut or raisins. Pour into greased 8x8 inch (or 9x9) cake pan.

Mix sauce ingredients in bowl until sugar is dissolved. Pour over batter. Bake at 350 degrees for 25 minutes or until cake tests done.

Cake will rise to the top and pudding will be at the bottom. Serve warm or cold, upside down, with a dollop of whipped cream.
