SPINACH QUICHE 
1 c. shredded Swiss cheese
4 eggs
2 c. whipping cream or light cream (20%)
1 tsp. salt
1/4 tsp. pepper
1 (8 oz.) pkg. chopped spinach thawed
Pastry for 9 inch One crust pie

Prepare pastry. Beat eggs and cream. Stir in remaining ingredients and bake at 425 degrees for 15 minutes. Reduce oven temperature to 300 degrees and bake for 30 minutes longer. Let stand 10 minutes before cutting. 6 servings.
