EVERYBODY'S FAVORITE PINEAPPLE -
ORANGE SALAD
 
1 (.8 oz.) pkg. sugar free vanilla pudding mix
1 (.3 oz.) pkg. sugar free orange gelatin
1 (20 oz.) can juice pack pineapple chunks with juice
1 (11 oz.) can mandarin oranges, drained
1 (8 oz.) container whipped topping
1 c. miniature marshmallows
1 c. flaked coconut
8 maraschino cherries, quartered

Mix together dry pudding mix and gelatin. Drain juice from pineapple; reserve. Cut pineapple chunks and orange sections into smaller segments. Fold whipped topping, reserved juice, and fruit into gelatin pudding mixture. Add marshmallows, coconut, and cherries; mix well. Garnish with additional cherries, coconut, and pecan halves, if desired.

This salad is an excellent keeper. Also works well with regular instant pudding mix. We also like to use other flavors of sugar free gelatin.
