LEMON POPPY CAKE RING 
1 1/2 c. sugar
1/2 c. butter
1 tbsp. lemon extract
1 tsp. vanilla
3 lg. eggs
2 c. flour
3/4 c. milk
1/4 c. poppy seeds
1 tbsp. lemon peel
2 tsp. baking powder
1/2 tsp. salt
Confectioners' sugar (optional)

Preheat oven to 350 degrees. Grease and flour tube pan. In large bowl, beat sugar, butter, lemon extract, vanilla and eggs until blended on low speed. Increase to high. Beat 5 minutes, until thick.

Reduce to low speed and add flour, milk, poppy seeds, grated lemon peel, baking powder and salt. Blend well. Pour in prepared tube pan. Bake 50-60 minutes until done. Cool and sprinkle with confectioners' sugar.
