CROCK POT BEEF STEW 
2 lbs. stew beef
1 lg. onion (chopped)
2 celery stalks (chopped)
4 carrots (sliced)
4 potatoes (cubed)
2 tsp. salt
2 tbsp. sugar
2 heaping tbsp. minute tapioca
2 c. tomato juice
Water (2 c.)
1 env. beef stew seasoning mix

Put raw meat on bottom of pot and layer vegetables. Mix salt, sugar, tapioca, tomato juice and water with seasoning mix. Pour over other ingredients. Cook on high all night, then the next morning turn to low. Stir the stew very good and add more water if it's too thick. I usually put more vegetables than the recipe calls for, also.
