ED'S RED BEANS AND RICE 
Two bags sm. red beans (not kidney beans)
1 lb. smoked sausage
1 lb. smoked or sugar cured ham
1 tsp. garlic juice
1 med. onion, finely chopped
Cajun seasoning to taste

Wash beans and add to cold water, bring to a boil. As water heats, add sausage, ham and seasonings. Cook at least four hours.

CAJUN SEASONING:

Salt
Dried red pepper
Parsley
Basil and thyme

(Or pre-mixed).
