SAUSAGE QUICHE 
9" pie shell, unbaked
1 lb. mild pork sausage
3 eggs
2/3 c. milk
Dash pepper
6 oz. shredded cheddar cheese

Bake pie crust at 400 degrees for 3 minutes. Take out and prick crust. Bake 5 more minutes. Cool. Cook sausage until brown and crumbly, then drain on paper towels.

Combine eggs, milk, seasonings and beat lightly. Stir in half of sausage. Sprinkle 3/4 cup of cheese over the pie crust. Top with the sausage and egg mixture. Sprinkle on remaining sausage and the other 3/4 cup cheese. Bake at 375 degrees for 50 minutes. Serves 6-8.
