GRANDMA GLADYS' PANCAKES 
2 c. all purpose flour
2 eggs, separated
2 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
Touch of vanilla
1 1/2 to 2 c. milk
2 tbsp. oil

Heat griddle or pan to medium high heat, spray with non-stick cooking spray.

Put flour and other dry ingredients in large bowl and make a center "bowl" to hold egg yolks and vanilla. With a wooden spoon, slowly go in circles so liquid picks up dry from sides, add a little milk at a time. Add oil. Beat egg whites until they are stiff, and gently fold into mixture. Test griddle, cakes will rise immediately if hot enough.

Cook and enjoy the lightest and fluffiest pancakes ever!
