SPICY SWEET POTATO PIE 
2 c. mashed sweet potatoes
1 c. brown sugar
1/2 c. melted butter
2 eggs, separated
1/2 tsp. ea. ginger, cinnamon, nutmeg
1/4 tsp. salt
1/2 c. evaporated milk or (1 sm. can)
1/2 c. sugar, beat with egg white
1 deep 9 inch pie shell or 2 (8 inch) frozen pie shells

Combine first 6 ingredients and egg yolks (food process works well). Beat egg whites with sugar until stiff. Fold egg whites into mixture until well blended. Pour into pie shell. Bake at 400 degrees for 10 minutes then at 350 degrees for 45 minutes more or until center is done.
