3 c. milk 1 c. yellow cornmeal 1 tbsp. sugar 5 eggs 3 tbsp. butter 1 tsp. salt 1 tsp. baking powder Use 2 quart casserole. Oven at 350 degrees. Bake for 45 minutes. Combine 2 cups of milk with the cornmeal and sugar in saucepan. Cook slowly until milk is absorbed. Stir frequently. Remove from heat and cool slightly. Add the beaten egg yolks, 1 cup milk and the butter, salt, and baking powder. Mix until smooth and well blended. Fold in the egg whites which have been beaten stiff. Pour into casserole dish and bake. Serve hot with soft butter. Put casserole in pan of water to bake. |
