DIABETIC SUGARLESS ORANGE
COOKIES
 
1/2 c. soft butter
1 egg
1/2 c. freshly squeezed orange juice
2 c. flour
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. chopped nuts
1/2 c. raisins

Mix butter, egg and orange juice. Add flour, baking powder, cinnamon, salt, nuts and raisins. Drop by teaspoons onto cookie sheet and bake at 375 degrees for 20 minutes.

NOTE: These cookies are especially made for diabetics to eat. Two cookies equal 60 calories. (1/2 fruit exchange and 1/2 fat exchange).

I feel compelled to warn anyone who is interested in baking these cookies...they are tasteless, dry and dull! It's always a shame to spend time baking without good results.

Just what were you expecting from a sugarless diabetic cookie? even the store bought ones are tasteless and dry. at least you can add more flavor to your homemade ones if you want so why didn't you? recommend orange oil, citrus peels, almond flavor.

I made these with dried apricots, almonds & almond extract. I baked them for only 11 min & they turned out pretty good. I did cheat and make a "glaze" for the top out of 1 tbl butter, 1 tbl powdered sugar & 1 tsp orange juice; it really gave them the extra flavor they needed. Overall, not too shabby.

Just because this recipe doesn't contain white sugar doesn't necessarily mean that it's good for diabetics. The orange juice will contain fructose and the white flour is pure carbohydrates. When cooking for a diabetic, always consider the amout of carbohydrates, not just sugar. Carbs are the enemy. Sugar just happens to be pure carbs, as is white flour. Consider using almond or oat flour instead.
