COOKIES FOR DIABETICS 
1/2 c. butter
1 egg
1/2 c. applesauce
1/2 c. quick oatmeal
1/2 c. raisins
1/2 c. flour
1/2 tbsp. sugar substitute
1/8 tsp. cloves
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla

Sift flour, spices, salt and soda together and add to other ingredients. These mold easily so keep dough in refrigerator and bake only 8 at a time and keep in refrigerator after they are baked. One cookie can be eaten with a meal.
