DIABETIC BANANA BREAD 
3 1/4 c. flour
4 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/2 c. margarine
1 c. eggs (4 med.), beaten
2 tsp. vanilla
4 bananas, mashed

Preheat oven to 350°F. Sift flour, baking powder, salt and baking soda. Mix margarine, eggs and non-nutritive sweetener (equivalent to 4 cups sugar) and vanilla. Add to flour mixture and stir until flour is moistened. Fold in mashed bananas. Place in 3 x 4 x 8 inch loaf pan which has been well greased. Bake 1 hour and 10 minutes.
