TOFU PATTIES 
1 lb. tofu, mashed
3 eggs
1/2 c. bread crumbs
2 tsp. soy sauce
1/4 tsp. oregano
1/4 tsp. sweet basil
3 tbsp. grated Parmesan cheese
1/2 tsp. granulated garlic
3 tbsp. onion, chopped fine
1/2 tsp. pepper

Mix all ingredients together well and form into patties. If not thick enough to hold well then add a little more crumbs. Fry in a little olive oil until golden brown on both sides. Serve topped with your favorite sauce.
