SELF FROSTING ANISE COOKIES | |
These cookies are time consuming and tedious to make. The finished product is BEAUTIFUL and may be the best cookie you will ever make. You need a heavy duty mixer. 2 1/4 c. flour, sifted 1/2 tsp. double acting baking powder 1/4 tsp. salt 4 eggs 2 c. sugar 1/2 tsp. anise oil (L'Orean oils are in most drug stores and supermarkets) Sift flour, baking powder and salt 3 times. Set aside. Beat eggs at low speed until frothy. Increase to medium speed. Beat eggs 10 minutes. Add sugar, one tablespoon at a time. This takes 5 minutes. Turn mixer to slow speed. Add dry sifted ingredients slowly. Beat 15 minutes. Add anise. Drop cookies 3/4 teaspoonful on 5 to 6 greased cookie sheets. Work quickly!! The dough sets up. Allow to stand overnight. Bake at 325 degrees for 12 to 14 minutes. There is NO shortening in recipe. Store airtight. |
