MOCK ANGEL FOOD CAKE 
6 egg whites
1/2 tsp. salt
1 tsp. cream of tartar
1/2 c. sugar
6 egg yolks
1/2 tsp. vanilla
1/2 tsp. almond flavoring
1 c. sugar
3/4 c. water
2 c. sifted flour

In large bowl beat egg whites and salt until foamy. Add cream of tartar and continue beating until stiff. Gradually add 1/2 cup sugar and beat until very stiff. Set aside.

In separate bowl beat egg yolks and flavorings until thick. Gradually beat in remaining 1 cup sugar. When very thick, add water; blend. Add flour; mix until well blended.

Carefully fold in egg whites. Bake in greased and lightly floured angel food pan at 350 degrees for 40-50 minutes. Turn upside down to cool. Remove from pan only after cake has cooled. Serve with fruit, whipped cream or ice cream. Serves 12 people easily.
