COFFEE CAN PUMPKIN BREAD 
2 c. sugar
1/2 c. oil
2 1/2 c. flour
2 c. canned pumpkin
1 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 egg
1 c. nuts or 1/2 c. raisins, if desired

Mix above ingredients well. Grease 2 (1 pound) coffee cans. Pour batter in cans (about half full). Bake 1 hour at 350 degrees.
