DOCTOR BIRD CAKE 
3 c. sifted all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
2 c. granulated sugar
1 tsp. salt
2 c. diced ripe bananas
1 c. vegetable oil
1 (8 oz.) can crushed pineapple with juice
1 1/2 tsp. vanilla
3 eggs

Measure flour, baking soda, cinnamon, sugar and salt; sift together.

Peel and dice the bananas; measure 2 cups. Add bananas to sifted dry ingredients; add oil, pineapple with juice, vanilla and eggs. Stir to blend mixture, but do not beat.

Pour batter into a greased 9 inch tube or bundt pan. Bake in 350 degree oven for 1 hour and 20 minutes. Set aside to cool on a rack without removing from the pan. Yield: About 15 large servings.
