SAUSAGE RAGOUT 
1 1/2 lbs. hot Italian sausage
1 1/2 lbs. sweet Italian sausage
1/4 c. oil
1 lg. onion, peeled and coarsely chopped
3 garlic cloves, peeled and minced
2 green peppers, chopped
2 sweet, red peppers, chopped
8 fresh, plum tomatoes, quartered
1 c. spicy tomato sauce
1/2 c. dry red wine
1/2 c. minced parsley
Salt and pepper

Cut sausages into 1/2 inch slices. Heat oil and cook sausage until well browned. Add onion and garlic. Cook for 5 minutes. Transfer meat, onion and garlic to deep casserole dish.

Set casserole over medium heat, add peppers. Cook until wilted, about 7 minutes. Add tomatoes, spicy tomato sauce, wine and parsley and season with salt and pepper. Simmer uncovered for 30 minutes. 8 to 10 servings.
