DO AHEAD LASAGNA 
1 green pepper, chopped
1 1/2 lb. bulk Italian sausage
1 onion, chopped
2 tsp. salt
1 tsp. chili powder
1 tbsp. sugar
1 tsp. garlic salt
1 1/2 tsp. basil or oregano
1-2 minced garlic
3/4 lb. uncooked lasagna noodles
1 can black olives
1 can mushrooms
1 (12 oz.) can tomato paste
1 (15 oz.) can tomato sauce
3 1/2 c. water
3/4 lb. Mozzarella cheese
1 lb. cottage cheese
2 eggs
Parsley flakes, generous amount

Brown meat with onion and pepper; add seasonings. Add olives, mushrooms, paste, sauce and water. Bring to boil and simmer 10 minutes. In 9 x 13 pan, ladle about 1 1/2 cups sauce. Cover with 4 noodles, then more sauce. sprinkle with 1/3 of Mozzarella cheese. Mix cottage cheese, eggs, and parsley together. Dot then with cottage cheese mixture. Makes 3 layers like this. Cover with foil. Bake at 350 degrees for 1 1/2 to 2 hours.
