EASY MICROWAVE LASAGNA | |
1 lb. sweet Italian sausage 1 (32 oz.) jar spaghetti sauce 1/2 c. dry red wine 1/2 tsp. dried basil 1/2 tsp. garlic powder 16 oz. Ricotta or cottage cheese 1/3 c. Parmesan cheese 1 tbsp. chopped parsley 1 egg, lightly beaten 1/4 tsp. pepper 8 lasagna noodles 8 oz. sliced Mozzarella Remove casings from sausage and break into pieces into microwave safe dish. Cover with paper towel and microwave on high for 5 minutes. Drain off fat and break up meat with fork. Place in casserole dish: Meat, spaghetti sauce, wine, garlic, and basil. Stir and microwave on high power for 7 to 8 minutes or until bubbly hot. Combine cottage cheese, Parmesan cheese, parsley, egg, and pepper. Spoon 1/3 of spaghetti sauce to cover the bottom of 10 x 13 inch microwave pan. Arrange 4 noodles (uncooked) over the sauce. Spread half of cheese mixture and half of Mozzarella slices over noodles. Repeat layers, with sauce as the final layer. Sprinkle with additional Parmesan cheese, if desired. Cover with sheet of wax paper and microwave on high for 6 minutes, then microwave on medium-high (70% power) for an additional 20 minutes. Let rest, covered, for 12 to 15 minutes before serving. This resting time is critical for the noodles to complete cooking. |
