CHOCOLATE PUDDING CAKE 
1 cup flour
3/4 cup sugar
2 tablespoons cocoa
2 teaspoons baking powder
1/2 teaspoon salt, optional
1 teaspoon vanilla
2 tablespoons vegetable oil
3/4 cup sugar
1/4 cup cocoa
2 cups boiling water

Preheat oven to 350°F. Grease and lightly dust with cocoa or flour a 9-inch square baking pan.

Mix together flour, sugar, 2 tablespoons cocoa, baking powder and salt. Add vanilla and vegetable oil or melted butter. Mix well and transfer batter to baking pan; level and smooth top with a spatula.

Combine 3/4 sugar and 1/4 cup of cocoa and sprinkle over batter in pan. Pour boiling water over all (DO NOT MIX!).

Bake in preheated oven for 40 to 45 minutes.
