RICE AND SPINACH CASSEROLE | |
1 lb. fresh spinach, torn (6 c.) 1/2 c. uncooked brown rice 3 eggs 4 oz. shredded cheddar cheese (1 c.) 2 tbsp. chopped fresh parsley 1/2 tsp. salt 3 tbsp. wheat germ 3 tbsp. grated Parmesan cheese 1 tbsp. oil Heat oven to 350 degrees. Grease 1 1/2 quart casserole. Cook brown rice as directed on package. In large bowl, beat eggs; add cooked rice, cheddar cheese, parsley, and salt. Fold in spinach. Pour into prepared casserole. In small bowl, combine wheat germ, Parmesan cheese, and oil. Sprinkle mixture over top of casserole. Bake at 350 degrees for 30 minutes or until spinach is tender. 9 (1/2 cup) servings. |
