FRIED RICE 
Butter, butter, or oil
3 tbsp. very finely chopped onions
Garlic or garlic powder to taste
1/2 tsp. coriander
1/2 tsp. caraway seed
1/2 tsp. hot red pepper
1 c. chopped ham or cooked pork
Salt and pepper to taste
3 1/2 c. cold cooked rice
1 c. cut-up shrimp (optional)
An omelet made of 3 eggs

Fry the onions in the butter until light brown. Add the garlic, spices, and meat; season with salt and pepper. Fry the meat for a few minutes; add the very fluffy and dry rice. Keep stirring until the rice browns lightly.

If too dry, add some meat stock. Add the shrimp if desired.

To serve: Cut omelet into thin slices. Put the rice mixture in a shallow dish and garnish with the omelet slices.
