STRAWBERRY CHEESECAKE 
1 c. quick oatmeal, uncooked
1/3 c. chopped nuts
1/4 c. brown sugar
1/4 c. butter, melted
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
1 tbsp. lemon juice
1/2 tsp. vanilla
2 eggs
1 pkg. sliced frozen strawberries
2 tbsp. cornstarch

Heat oven to 350 degrees. Combine oats, nuts, brown sugar and butter. Mix well. Firmly press into 9 inch pie plate to form crust. Bake for 10 minutes, cool.

In large bowl, combine cream cheese, sugar, lemon juice, vanilla. Mix on medium until well blended. Add eggs one at a time. Mix well. Pour into crust. Bake 30 minutes. Cool.

Mix in saucepan 1 package frozen strawberries (thawed) and 2 tablespoons cornstarch. Cook on medium heat, stirring frequently until thickened. Cool and Spread on top. Keep refrigerated.
