FRENCH APPLE POPOVER PANCAKE 
6 eggs
1 1/2 c. milk
1 c. flour
3 tbsp. sugar
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. cinnamon
1 stick butter
3 apples, peeled & sliced thin
1/4 c. brown sugar

Preheat oven to 425 degrees. Mix eggs, milk, flour, sugar, vanilla, salt and cinnamon. Melt butter in 9 x 13 inch pan in oven. Spread apples in pan, return to oven until butter sizzles. Do not let brown. Remove from oven and pour batter over apples. Sprinkle with brown sugar. Bake in middle of oven for 20-25 minutes or until puffed and brown. Serve immediately with maple syrup.
