RHUBARB UPSIDE-DOWN CAKE | |
2 c. rhubarb 1 c. brown sugar 2 tbsp. butter 2 c. flour 1/2 c. butter 1 c. sugar 2 eggs 1/2 c. milk 2 tsp. baking powder 1/2 tsp. salt 1 tsp. vanilla Melt 2 tablespoons butter in square pan. Stir in brown sugar and add rhubarb. Cream 1/2 cup butter and sugar. Add eggs, beating well. Add dry ingredients, alternately with milk and vanilla. Beat until smooth. Pour over rhubarb. Bake at 375 degrees for 45 minutes. Let stand 5 minutes; turn upside down. |
