PUMPKIN DESSERT BREAD | |
3 c. flour 1 tsp. salt 2 c. sugar 1 1/2 tsp. baking soda 2 tsp. cinnamon 4 eggs, beaten 1 1/4 c. Crisco oil 2 c. canned pumpkin 3/4 c. chopped nut meats 1/2 tsp. nutmeg 1/2 tsp. ginger 1/2 tsp. cloves 1/2 tsp. allspice In a large bowl, combine flour, salt, baking soda, and spices. Set aside. In a smaller bowl, beat 4 eggs; blend oil, pumpkin, and nuts. Gradually add wet ingredients to dry ingredients. Stir carefully, just enough to dampen dry ingredients. Pour into 2 greased 9 5/8 x 2 3/4 inch loaf pans. Bake 1 hour and 10 minutes in 350 degree oven or until an inserted toothpick comes out free of dough. Remove from pan and finish cooling on rack. |
