MICROWAVE FISH WITH ITALIAN
FLAIR
 
2 lg. tomatoes, diced
1 tsp. basil leaves
1/2 tsp. oregano leaves
2 cloves garlic, finely minced
Salt and pepper to taste
1 1/2 lbs. fresh or frozen fish fillets or steaks, thawed

Mix tomatoes, basil, oregano, garlic, salt, and pepper in a 4 cup mixing bowl. Cook, uncovered, on 100 percent power (high) for 4-5 minutes; keep warm. Rinse fillets under cold water. Pat dry. Place fillets in shallow microwave baking dish, thicker portions to outside. Cover with plastic wrap; vent one side to allow steam to escape. Cook on 100 percent power for 3-6 minutes or until fish is slightly translucent in the center, turning dish every 2 minutes. Allow fish to stand, covered, 3-5 minutes to complete cooking. Drain. Top fish with sauce. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
