GRANDMOTHER BESS' FRESH APPLE
CAKE
 
1/2 c. lard (Crisco)
1 1/2 c. sugar
2 eggs
1/3 c. buttermilk
2 1/4 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
3 tsp. nutmeg
3/4 tsp. salt
3 c. chopped raw apples
1 c. black walnuts or hickory nuts

Cream shortening and sugar. Beat in whole eggs until fluffy. Add buttermilk. Sift dry ingredients in to first mixture and beat until smooth. Batter will be stiff. Fold in or stir in chopped apples and walnuts. Bake in 9 x 13 x 2 inch pan or bundt pan at 350 degrees for 45 to 50 minutes or until toothpick comes out clean.
