3 tbsp. butter 1 c. light brown sugar (packed) 1 tsp. vanilla 1 egg 2 tbsp. flour (must be exact) 3 c. chopped pecans (coarsely chopped) Melt butter in 1 1/2 to 2 quart saucepan. Remove from heat. Stir in sugar. Add vanilla and egg. Stir until smooth. Stir in flour and finally add nuts. Place well rounded teaspoon of dough 3 inches apart (no closer) on aluminum foil, on cookie sheet. With back of spoon move nuts around gently so they spread all over cookie. Bake at 350 degrees for 7-10 minutes. Cookies are done when they are completely colored including centers. Nuts will remain light. Slide foil off cookie sheet. Let cookies remain on foil until completely cooled and the foil may be gently and easily peeled away. If it doesn't, cookies have not been baked long enough. Store in airtight container to keep crisp. |
