LITE PINEAPPLE UP-SIDE-UP CAKE | |
1 c. plus 2 tbsp. flour 1/3 c. plus 2 tsp. sugar 1/4 c. less 2 tsp. butter 1/4 c. whipped butter 2 1/2 tbsp. brown sugar, packed 6 slices pineapple, drained (no sugar added) 5 Maraschino cherries, halved 2 1/2 tsp. baking powder 1/2 c. buttermilk 2 tsp. vanilla 1 egg 1 tbsp. cinnamon Dust with confectioners sugar if desired Spray pan with butter flavored Pam. In small bowl, combine flour and baking powder; set aside. In a separate small bowl, combine buttermilk and vanilla. Set aside. In a medium mixing bowl cream butter, butter and sugar until light and lemon colored. Alternately add flour mixture and buttermilk mixture, beating well after each addition. Spread evenly into prepared pan. Top with pineapple slice and cherry halves. Mix brown sugar and cinnamon and sprinkle evenly over top of cake. Bake in a preheated oven at 350 degrees for 20 to 23 minutes until edges are golden and toothpick tests clean. Cool completely on rack. |
