SPANISH CABBAGE 
1 sm. onion, thinly sliced
2 tbsp. shortening
1 c. canned tomatoes (or 2-3 fresh tomatoes, chopped)
1 sm. cabbage, thinly sliced
1 sm. pepper, thinly sliced
Salt to taste

Fry onion in shortening; add remaining ingredients in order listed. Cover; cook over low heat until tender. Yield: 6 servings.
