PUMPKIN BREAD | |
15 or 16 oz. can (2 c.) pumpkin 3 c. sugar 1 c. oil 2/3 c. water 4 eggs 3 1/2 c. Pillsbury's best all-purpose or unbleached flour 2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp nutmeg 1/2 tsp. ginger Heat oven to 350 degrees. Grease (not oil) and flour bottoms only of two 9 x 5 inch or 8 x 4 inch loaf pans. In large bowl, blend first 5 ingredients. Beat 1 minute at medium speed. Add remaining ingredients; blend at low speed until moistened. Beat 1 minute at medium speed. Pour batter in prepared pans. Bake at 350 degrees for 60 to 75 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pans and cool completely. |
