PUMPKIN NUT BREAD 
Preheat oven to 350 degrees. Lightly grease and flour 9"x13" pan or 3 loaf pans. Sift and blend (with mixer) all dry ingredients:

3 c. sugar (2 c. white, 1 c. brown)
3 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. pumpkin spice
1/2 tsp. ginger
1/2 tsp. nutmeg
2 tsp. cinnamon

In separate large bowl, blend well all liquids and nuts:

4 eggs
1 c. walnuts or pecans
1 c. oil
2/3 c. water (cool)
2 c. pumpkin (16 oz. can) (banana or sweet potato can be substituted)
1 tsp. vanilla

Now add dry ingredients to bowl of wet and blend well. Pour into pan and bake for 1 hour and 15 minutes. Do not overbake.
