PUMPKIN NUT BREAD 
1 3/4 c. canned pumpkin
1 1/2 c. light brown sugar, packed down
1/2 c. melted butter
3 eggs, lightly beaten
3 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. each nutmeg and salt
1 c. roasted, shelled pine nuts or chopped pecans

Sift flour, baking powder, and spices together. Stir in nuts. Mix other ingredients together in a big bowl. Add flour mixture; blend thoroughly. Pour batter into 2 well oiled loaf pans. Bake at 350 degrees about 1 hour or until toothpick poked in center comes out clean. Cool on rack.
