ENSALADA DE NAPAL 
1 lg. jar cactus, well drained
2 tsp. green onion, diced
1 sm. jar Orland hot mixed jardiniera vegetables
1 sm. can black pitted olives, sliced
4-5 leaves fresh cilantro, shredded
1/2 c. grated Jack cheese

Place rinsed and drained cactus in large bowl, add onion. Remove cauliflower, carrots and onions from mixed vegetables. Dice cauliflower, carrots and add with onions to cactus mix. Add 2 teaspoons reserved juices from vegetable jar, 2 tablespoons olive oil. Mix in olives, cilantro, cheese. Mix well and serve. Goes great with a Mexican dinner.
